U2690 Common Watercress is a perennial aquatic or semi-aquatic leafy vegetable grown for its tender green shoots and rounded leaflets. Smooth, branching stems develop a creeping or floating habit and may form roots at the nodes when they contact consistently moist growing media. Under suitable conditions, plants typically reach approximately 8–16 inches tall. Young shoots may be ready for an initial cutting approximately 20–40 days after transplanting, depending on temperature, light and establishment. The leaves have a fresh, distinctly peppery flavor suited to soups, stir-fries and other cooked vegetable preparations.
