- Parsnip is a biennial herbaceous plant belonging to the genus Pastinaca in the family Apiaceae. Native to Europe, this variety has smooth and glabrous plant. The roots are stout, conical, brownish-yellow, about 30 cm long and 10 cm in diameter at the apex, rich in sugar and fat. It is mainly cultivated for edible use, and can also be used as feed or for wine making. Its fleshy roots are suitable for soup, boiling or stir-frying. Young leaves, after being blanched in boiling water, can be cooked or used in salads. Parsnip prefers a cool climate and has strong cold resistance. The optimal temperature for growth is 20–25℃. It grows well in deep, well-drained, fertile sandy loam soil and shows strong adaptability.
