Main characteristics of the variety:

- Celeriac 'Giant Prague' (also called root celery, Apium graveolens var. rapaceum) is a biennial herbaceous variant of the Apium genus in the Apiaceae family. Its aboveground parts resemble celery, featuring dark green, pinnately divided leaves with serrated margins and green petioles. The underground swollen taproot is spherical and yellow-brown, with individual bulbs weighing up to 200 grams.

- This variety exhibits strong cold tolerance, surviving short frost exposure, but is heat-sensitive—high summer temperatures may cause browning and rot in the fleshy roots. It thrives in fertile, loose, and moist soil, with optimal soil temperature at 20°C and growth temperature at 25°C. Typically sown in late spring and harvested in early autumn, it yields one annual crop.

- Both the fleshy root and petioles are edible, offering a crisp texture, mild celery flavor, and versatility for stir-frying, salads, stews, or soups. Rich in nutrients, its juice is also used medicinally, combining culinary and health benefits.
