75 Irish Liqueur is a productive mid-early indeterminate Green-When-Ripe tomato with an unusual appearance and exceptional flavor. Plants typically reach approximately 4.3–4.9 feet and produce rounded to flat-round, lightly ribbed beefsteak fruits weighing approximately 5.3–10.6 oz, with larger specimens possible under excellent growing conditions. The fruits remain green when ripe, changing from deep green to pale green, yellow-green, or amber-olive while retaining a darker green shoulder. Dense green flesh is juicy, tender, and richly flavored, with sweetness exceeding acidity and a refreshing citrus-like aroma. Fruits generally resist cracking well and continue producing through cool summer conditions. Allow the skin to lighten and the fruit to soften slightly before harvest, since fully ripe fruits may still look green. Excellent for fresh slicing, salads, sandwiches, sauces, tomato platters, and unusual green-fruited collections.
