Variety characteristics:

• 331 Yoshkin Cat is a highly productive mid-early Russian tomato producing substantial beefsteak hearts weighing approximately 7.1 to 17.6 oz in this seed line, with occasional larger fruits under favorable conditions. The impressive tomatoes range from broad, rounded hearts and flattened beefsteaks to deeply folded double fruits, ripening through rosy pink, raspberry-red, and rich crimson-pink. Broad shoulders may retain green or olive shading, while faint golden streaks and shallow ribbing add character to individual fruits. Inside, the thick, exceptionally meaty yet juicy flesh develops a sparkling, sugar-rich texture with relatively small seed cavities. Its full-bodied flavor combines abundant sweetness, concentrated tomato richness, a strong garden aroma, and a light refreshing acidity. Vigorous indeterminate regular-leaf plants grow approximately 5 to 6 feet tall and continue producing over an extended season. Train the vines to one or two main stems and provide a heavy-duty cage or trellis with additional support for the largest fruits. Excellent for thick fresh slices, sandwiches, burgers, salads, caprese, tomato platters, juice, roasting, purée, paste, and rich pink sauces.
