274 Emerald Truffle is a distinctive green-when-ripe tomato producing ribbed pear-shaped to broad truffle-shaped fruits weighing approximately 2.8 to 8.8 oz. The deeply sculpted tomatoes mature from bright emerald and chartreuse to olive green, amber gold, and bronze, with some fully ripe fruits developing a subtle rusty pink or red-brown blush. Inside, the juicy green flesh is dense and meaty with relatively small seed cavities, delivering rich sweetness, mild acidity, and a complex savory-fruity tomato finish. Vigorous indeterminate vines generally reach approximately 4 to 6 ft and produce generous clusters throughout the main season. Provide sturdy staking or trellising and harvest when the skin develops warmer amber tones and the fruit yields slightly to gentle pressure. Excellent for fresh slicing, salads, sandwiches, salsa verde, green tomato sauces, roasting, and colorful tomato platters.
